Toktok: Arabic Bakery in Neukölln, Berlin
Berlin is a very diverse city, which makes it one of the best places to find traditional food from a great variety of countries.
Toktok (أفران التُكتُك), is a traditional Iraqi bakery and restaurant located on the Sonnenallee in Neukölln, Berlin and named after a typical Iraqi car/motorbike.
Khubz has the same ingredients as any other bread: flour, yeast, salt and water, but what makes it so special is its preparation. It is baked in a traditional bread oven called tannour, which has a vertical and cylindrical shape with a base larger than its opening and can heat up to extremely high temperatures. To bake the khubz, the bread dough needs to be arranged and shaped in circles on the internal walls of the oven and together with the extreme heat, the dough will stick to the walls and cook very quickly.
Everyday people go to get Khubz, traditional Arabic bread, and bring it home to their table. It is eaten at any time of the day together with a great variety of food and it is also used as a form of cutlery by folding it on itself to grab.
